Yes, you can get potatoes all year, but now is the time to enjoy fresh, local, new potatoes.
Ingredients:
- 2 lbs Ontario new potatoes
- 1 tablespoon olive oil
- sea salt
- freshly ground black pepper
- 2 sprigs rosemary
Directions:
- Wash potatoes and parboil until almost tender. When done, drain them, and rough them up a little in your colander. Drizzle with just a little touch of olive oil and sprinkle with salt. Add a little freshly ground black pepper and the rosemary.
- Wrap potatoes in tin-foil and throw them on the barbeque for 25 minutes until golden brown.
Serves 6 as a side dish.
